What am I doing wrong? Bert, as toboxxx said up here, sometimes you get shards (hearts) of a girl - not all at once. When you complete 100 shards for a girl (100% affection), she'll show up in your harem. Check your harem for the shaded/blacked girls with less than 100 hearts and see if you can recognize any of the girls you got at the night club...
